Top Sirloin
Top Sirloin Tartar
Ingredients:
- 1 top sirloin
- 1/2 cup gherkins
- 1/4 cup capers
- 2 shallots
- 2 tbsp dijon
- 2 tbsp worchestershire
- 1 tbsp Tabasco
- 2 egg yolks
- 1/2 cup parsley
- 1 Baguette
Method:

Slice beef into strips double the width of your knife blade, then slice into small cubes, refrigerate

Chop gherkins, shallots, capers and parsley

Separate egg yolks

Slice baguette to desired size and toast

Combine everything but baguette into a bowl, season well with salt and pepper

Add more Tabasco and Worcestershire to taste if needed. Eat with toasted baguette.
