Salmon risotto with peas and corn. The 6oz sockeye portion was perfect with a cup of carnaroli rice and lots of grated Parmesan. Four generous portions. It will be a regular dinner feature.

The salmon was spectacular! Milder in the flavour than farmed sockeye it was the essence of ‘wild caught’. I served it with risotto and it was a memorable meal
